Don’t you hate it? You buy a few baskets of luscious looking berries and within a day it seems they’re gathering mold and you have to toss a bunch of them out. It feels like throwing money down the disposal, doesn’t it?
Toss no more. Yesterday, at a meeting for a baking group I belong to, I learned a cool trick from Harold McGee. If you don’t know who Harold McGee is, he’s not only a food chemist extraordinaire and has written several books, but he also wrote for the NY Times for years.
Now, we all know that high temperatures suppress mold. Well, Harold says that if you drop your berries into 120 degree water for 30 seconds it will kill the mold spores. Let them dry out on paper toweling and they will last for several days. You can do the same thing with larger fruit, you just have to leave it in the hot water longer.
Now I can’t wait to get some berries and try it out. How easy is that?
